Preheat the oven to 400°F (200°C). Grease a 9-inch square baking dish.

In a large bowl, combine the mashed sweet potatoes, cornmeal, flour, baking powder, and salt.

In a separate bowl, whisk together the buttermilk, eggs, honey, and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the cornbread is baking, prepare the collard confetti. Heat olive oil in a large skillet over medium heat. Add the collard greens, red bell pepper, red onion, garlic, salt, and black pepper. Sauté for 5-7 minutes, or until the greens are wilted.

Remove the cornbread from the oven and let it rest for 10 minutes. Serve warm with the collard confetti on top.
