  1. Heat olive oil in a large pot over medium heat. Add chopped sweet onion and minced garlic, and sauté until onion becomes translucent.
  2. Add diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until pumpkin is tender.
  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  4. Return the pureed soup to the pot and stir in heavy cream. Season with salt and black pepper to taste.
  5. Simmer for another 5 minutes to heat through.
