In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the red food coloring and vanilla extract.

In a small bowl, combine the buttermilk and vinegar. Add the flour mixture to the butter mixture alternately with the buttermilk mixture, beginning and ending with the flour mixture.

In a small bowl, dissolve the baking soda in 1 teaspoon of water. Gently fold the baking soda into the cake batter.

Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.

In a medium bowl, beat together the cream cheese, powdered sugar, and heavy cream until smooth and creamy.

Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
