In a large mixing bowl, combine the yeast, warm water, and honey. Let it sit for 5 minutes until frothy.

In a separate bowl, mix together the flour, salt, cinnamon, and cardamom.

Add the dry ingredients to the yeast mixture and mix well until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Punch down the dough and shape it into a loaf. Place it on the prepared baking sheet.

Brush the top of the loaf with water and sprinkle with the sunflower seeds, pumpkin seeds, flaxseeds, and sesame seeds.

Bake for 40 minutes or until the loaf is golden brown and sounds hollow when tapped on the bottom.

Remove from the oven and let it cool on a wire rack before slicing.
