  1. In a large mixing bowl, combine the yeast, warm water, and honey. Let it sit for 5 minutes until frothy.
  2. In a separate bowl, mix together the flour, salt, cinnamon, and cardamom.
  3. Add the dry ingredients to the yeast mixture and mix well until a dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Punch down the dough and shape it into a loaf. Place it on the prepared baking sheet.
  8. Brush the top of the loaf with water and sprinkle with the sunflower seeds, pumpkin seeds, flaxseeds, and sesame seeds.
