Swedish Jam Shortbread, also known as ‘Syltkakor’, is a traditional Swedish cookie that is often served during fika, a Swedish coffee break.

Preheat the oven to 350°F (180°C).

In a bowl, mix the flour and sugar together.

Cut the butter into small cubes and add it to the flour mixture.

Use your hands or a pastry cutter to mix the butter into the flour until it resembles coarse crumbs.

Add the vanilla extract and mix until the dough comes together.

Press two-thirds of the dough into the bottom of a greased baking dish.

Spread the jam evenly over the dough.

Crumble the remaining dough over the jam.

Bake for 25-30 minutes, or until the edges are golden brown.

Allow to cool for 30 minutes before cutting into squares.
