Madeleines are a traditional French tea cake that are said to have been named after a young maid named Madeleine who baked them for the Duke of Lorraine in the 18th century.

  1. Preheat the oven to 375°F (190°C). Grease and flour the madeleine molds.
  2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  4. Gradually add the flour and mix until just combined.
  5. Spoon the batter into the prepared molds, filling each about 3/4 full.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Remove from the oven and let the madeleines cool in the molds for a few minutes.
  8. Gently remove the madeleines from the molds and transfer to a wire rack to cool completely.
  9. Serve and enjoy!
