Sunshine’s broccoli noodle casserole
Broccoli is a great source of vitamins C and K, as well as fiber.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 375°F (190°C).

Cook the noodles according to the package instructions.

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the broccoli florets to the skillet and cook for another 5 minutes.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.

Drain the cooked noodles and add them to the mixing bowl. Stir to combine.

Add the cooked broccoli mixture and cheddar cheese to the mixing bowl. Stir until well combined.

Transfer the mixture to a greased casserole dish.

Bake for 30-35 minutes, or until the top is golden brown and the casserole is set.

Let it rest for 10 minutes before serving.
