Grate the summer squash and squeeze out excess moisture using a clean kitchen towel.

Heat olive oil in a skillet over medium heat.

Drop spoonfuls of the squash mixture onto the skillet and flatten slightly. Cook for 2-3 minutes on each side until golden brown.
