  1. In a saucepan, combine the mixed berries, sugar, water, and vanilla extract. Cook over medium heat until the berries release their juices.
  2. Remove from heat and let cool slightly.
  3. Cut the crusts off the bread slices and line a pudding basin with them, overlapping slightly.
  4. Pour the berry mixture into the bread-lined basin, reserving some of the liquid.
  5. Cover the top of the pudding with more bread slices.
  6. Place a plate or lid on top of the basin and weigh it down with a heavy object. Refrigerate for at least 4 hours or overnight.
  7. To serve, remove the weight and plate, and carefully turn the pudding out onto a serving dish. Serve with whipped cream.
