Rhubarb Almond Breakfast Bars
Rhubarb is actually a vegetable, but it is often used as a fruit in cooking.
This is vegetarian recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large bowl, combine the rhubarb, almonds, oats, all-purpose flour, brown sugar, butter, egg, vanilla extract, baking powder, and salt. Mix well.

Press half of the mixture into the bottom of the prepared baking dish.

Bake in the preheated oven for 15 minutes.

Remove from the oven and spread the rhubarb jam evenly over the baked crust.

Crumble the remaining oat mixture over the top of the jam.

Return to the oven and bake for an additional 25 minutes, or until the top is golden brown.

Allow to cool completely before cutting into bars.
