Summer Fruit Shortcakes
Shortcakes are believed to have originated in the United States during the 19th century and were traditionally served with fresh fruits and whipped cream.

Preheat the oven to 400°F (200°C).

In a large bowl, combine the shortcakes, sugar, and vanilla extract. Mix well.

Divide the mixture into 8 portions and shape them into round disks. Place them on a baking sheet.

Bake for 12-15 minutes or until golden brown.

In the meantime, wash and cut the fresh fruits into bite-sized pieces.

In a separate bowl, whip the cream until stiff peaks form.

Once the shortcakes are baked, let them cool for a few minutes.

Slice each shortcake in half horizontally.

Place a dollop of whipped cream on the bottom half of each shortcake.

Top with a generous amount of mixed fresh fruits.

Place the top half of the shortcake on the fruits.

Garnish with a sprig of mint leaves.

Serve immediately and enjoy!
