In a bowl, whisk together the all-purpose flour, semolina, ground almonds, baking powder, and salt.

In a separate large bowl, cream together the olive oil, softened butter, and granulated sugar until light and fluffy.

Beat in the egg yolks, vanilla extract, and almond extract until well combined.

Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

Roll the dough into small balls and place them on the prepared baking sheet.

Flatten each ball slightly with the back of a fork and sprinkle with sliced almonds.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
