  1. Preheat the grill to medium-high heat.
  2. Cut the peaches in half and remove the pits.
  3. Brush the cut side of the peaches with melted butter and sprinkle with sugar.
  4. Place the peaches on the grill, cut side down, and cook for 3-4 minutes until grill marks appear.
  5. Flip the peaches and grill for an additional 2-3 minutes.
  6. Remove the peaches from the grill and let them cool slightly.
  7. In a bowl, mix together the flour, baking powder, salt, and sugar.
  8. Add the milk and melted butter to the dry ingredients and stir until just combined.
  9. Drop spoonfuls of the batter onto a greased baking sheet and bake at 400°F for 10-12 minutes or until golden brown.
  10. Remove the shortcakes from the oven and let them cool.
  11. To assemble the shortcakes, slice the grilled peaches and place them on the bottom half of each shortcake.
  12. Top with whipped cream and mint leaves.
  13. Place the top half of the shortcake on top and serve.
