Sugar and Cinnamon Spice Muffins

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

While the muffins are baking, melt the butter in a small saucepan over low heat.

In a shallow bowl, combine the granulated sugar and cinnamon.

Remove the muffins from the oven and let them cool for a few minutes.

Dip the top of each muffin into the melted butter, then roll it in the cinnamon sugar mixture.
