Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.

In a large bowl, combine the bread crumbs, parsley, sage, thyme, salt, and pepper. Add the cooked onion and celery mixture, and mix well.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal squares.

Place a spoonful of the stuffing mixture onto the center of each puff pastry square. Fold the corners of the pastry over the filling, and pinch the edges to seal.

Place the stuffed puff pastry squares on a baking sheet lined with parchment paper. Brush the tops with vegetable broth.

Bake for 20-25 minutes, or until the puff pastry is golden brown and crispy.

Remove from the oven and let rest for 5 minutes before serving.
