Preheat the oven to 325°F (163°C).

In a medium bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.

In a small saucepan, combine the strawberries, rhubarb, cornstarch, and water. Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let cool.

Pour half of the cream cheese mixture over the crust. Spoon half of the strawberry-rhubarb mixture over the cream cheese. Swirl with a knife. Repeat with the remaining cream cheese and strawberry-rhubarb mixtures.

Bake for 55-60 minutes or until the center is set. Remove from the oven and let cool in the pan for 10 minutes, then remove the sides of the pan.

Refrigerate for at least 4 hours or overnight. Serve chilled with whipped cream on top.
