  1. In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  2. In a large mixing bowl, beat cream cheese and sugar until smooth. Add lemon juice and vanilla extract, and mix until well combined.
  3. In a separate mixing bowl, beat heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Pour half of the cream cheese mixture over the crust in the springform pan. Top with sliced strawberries. Pour the remaining cream cheese mixture over the strawberries.
  5. Refrigerate for at least 4 hours, or until set.
  6. Before serving, garnish with lemon zest.
