Preheat the oven to 325°F (163°C). Crush the ginger snap cookies until fine crumbs form. Mix the crumbs with melted butter. Press the mixture into the bottom of a 9-inch (23cm) springform pan.

In a large mixing bowl, beat cream cheese, sugar, vanilla extract, and chai spice mix until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely.

Once cooled, refrigerate the cheesecake for at least 2 hours or overnight.

Before serving, remove the sides of the springform pan. Top with whipped cream and sprinkle with ground cinnamon and nutmeg.
