  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, mix together the mashed bananas, sugar, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced strawberries.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
