Lemony Apple Muffins

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a large bowl, cream together the butter and sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.

Fold in the chopped apples and lemon juice.

Divide the batter evenly among the prepared muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
