  1. In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, tossing with a fork until a dough forms.
  2. Shape the dough into a disk and wrap it in plastic wrap. Refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 12-inch (30cm) circle.
  4. Transfer the dough to a parchment-lined baking sheet.
  5. In a small bowl, mix together the strawberries, raspberries, cornstarch, and lemon juice. Spoon the fruit mixture onto the center of the dough, leaving a 2-inch (5cm) border.
  6. Fold the edges of the dough over the fruit, pleating as necessary. Brush the edges of the dough with the beaten egg.
  7. Bake for 30-35 minutes, or until the crust is golden brown and the fruit is bubbly.
  8. Allow the galette to cool for a few minutes before serving. Dust with powdered sugar, if desired.
