Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a tart tin.

Crumble the Stilton cheese over the pastry.

In a saucepan, combine the cranberries, red onion, brown sugar, apple cider vinegar, salt, and black pepper. Cook over medium heat until the cranberries burst and the chutney thickens.

Pour the cranberry chutney over the Stilton cheese.

Beat the egg and brush it over the edges of the pastry.

Bake in the preheated oven for 30 minutes or until the pastry is golden.
