Stilton and Broccoli Soup

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

Add the broccoli florets and vegetable stock to the pot. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the broccoli is tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the soup to the pot and stir in the crumbled Stilton cheese until melted and well combined.
