Stained Glass Cookies
Stained Glass Cookies are called so because the crushed hard candy in the center melts and creates a beautiful ‘stained glass’ effect when baked.
This is vegetarian recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Roll out one disk of dough on a lightly floured surface to about 1/4 inch thickness.

Use cookie cutters to cut out shapes from the dough, and transfer them to the prepared baking sheet.

Use a smaller cookie cutter to cut out the centers of each shape.

Crush the hard candy into small pieces and fill the cut-out centers of the cookies with the crushed candy.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Repeat with the remaining dough and candy.

Once the cookies are completely cool, they are ready to serve.
