In a large mixing bowl, combine the flour, sugar, yeast, and salt.

Add warm water, vegetable oil, and eggs. Mix well until a dough forms.

Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.

Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough and divide it into 3 equal portions. Roll each portion into a long rope.

Braid the ropes together, then shape the braid into a spiral.

Place the spiral challah on a baking sheet lined with parchment paper. Cover with a towel and let it rise for another 30 minutes.

Preheat the oven to 350°F (175°C).

Brush the challah with the egg yolk and sprinkle with poppy seeds or sesame seeds.

Bake for 20-25 minutes, or until golden brown.
