Spinach and Cheese Turkish Pides
Turkish Pides are a popular street food in Turkey and are often enjoyed with a side of yogurt or ayran.

In a large mixing bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and olive oil, and knead the dough until smooth. Let it rest for 10 minutes.

Meanwhile, prepare the filling by sautéing spinach, red bell pepper, tomato, and onion in a pan until softened. Season with black pepper and cumin.

Preheat the oven to 200°C (400°F). Divide the dough into 4 equal portions and roll each portion into an oval shape.

Spread the filling mixture on one half of each oval-shaped dough. Crumble feta cheese and mozzarella cheese on top. Fold the other half of the dough over the filling and seal the edges.

Beat an egg and brush it over the pides. Sprinkle with black olives and parsley.

Place the pides on a baking sheet and bake for 15-20 minutes, or until golden brown.
