Spinach Alfredo Enchiladas
Enchiladas originated in Mexico and are traditionally made with corn tortillas.

Preheat the oven to 375°F (190°C).

In a large bowl, combine the spinach, Alfredo sauce, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix well.

Warm the tortillas in the microwave for 30 seconds to make them more pliable.

Spoon the spinach mixture onto each tortilla and roll them up. Place the enchiladas in a baking dish.

Drizzle the olive oil over the enchiladas.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Let the enchiladas rest for 5 minutes before serving.
