  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, vanilla extract, and pumpkin pie spice. Mix until well combined.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 60 minutes, or until the center is set and the edges are lightly browned.
  7. Turn off the oven and leave the cheesecake in the oven for 1 hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 2 hours, or overnight.
  9. Before serving, pipe a spiderweb design on top of the cheesecake using whipped cream and chocolate syrup.
  10. Serve chilled and enjoy!
