  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water to a boil and add the rinsed quinoa. Cook for 15 minutes or until the quinoa is tender.
  3. In a separate pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add canned tomatoes, red chili flakes, cumin powder, paprika, salt, and black pepper to the pan. Stir well.
  5. Simmer the tomato mixture for 10 minutes.
  6. Once the quinoa is cooked, fluff it with a fork and add it to the tomato mixture. Mix well.
  7. Cook for an additional 5 minutes to allow the flavors to blend.
  8. Remove from heat and stir in fresh cilantro and lime juice.
  9. Let the dish rest for 5 minutes before serving.
