Cook rice noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and cook until fragrant.

Add sliced red bell pepper, carrots, and broccoli to the pan. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

Push the vegetables to one side of the pan and add cubed tofu. Cook for 3-4 minutes until lightly browned.

In a small bowl, whisk together soy sauce, sriracha sauce, and lime juice. Pour the sauce over the vegetables and tofu, and stir to combine.
