Pavlova is a meringue-based dessert named after the Russian ballerina Anna Pavlova. It is believed to have been created in honor of her visit to Australia and New Zealand in the 1920s.

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites until stiff peaks form.
  3. Gradually add the sugar, cornstarch, vinegar, cinnamon, and ginger, and continue to beat until the mixture is glossy and holds its shape.
  4. Spoon the meringue mixture onto the prepared baking sheet, forming six individual pavlova nests.
  5. Bake for 90 minutes, then turn off the oven and let the pavlovas cool completely in the oven.
  6. Meanwhile, cut the plums into quarters and remove the pits.
  7. In a small saucepan, combine the plums, honey, and a pinch of cinnamon. Cook over medium heat until the plums are tender and the sauce has thickened slightly.
  8. Remove the pavlovas from the oven and top each nest with a dollop of whipped cream and some of the spiced plum compote.
  9. Garnish with fresh mint leaves and serve immediately.
