  1. Preheat the oven to 350°F (175°C). Crush the Biscoff cookies in a food processor until fine crumbs form. In a small bowl, mix the cookie crumbs with melted butter. Press the mixture into the bottom of a greased 9x9-inch baking dish to form the crust.
  2. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the pumpkin puree, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.
  3. Gradually add the all-purpose flour to the cream cheese mixture and mix until smooth.
  4. Pour the cream cheese mixture over the crust in the baking dish. Smooth the top with a spatula.
  5. Bake for 35 minutes or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours or until firm.
  7. Cut into bars and serve with whipped cream and a drizzle of caramel sauce.
