  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, cumin, and cayenne pepper.
  3. In a separate bowl, beat the eggs, then stir in the milk, vegetable oil, and honey.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the corn kernels.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
