Spanakopita

Preheat the oven to 180°C (350°F).

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until translucent.

Add the spinach to the skillet and cook until wilted. Remove from heat and let it cool.

In a large bowl, crumble the feta cheese. Add the cooled spinach mixture, beaten eggs, chopped dill, salt, and pepper. Mix well.

Lightly grease a baking dish. Layer half of the phyllo sheets in the dish, brushing each sheet with olive oil.

Spread the spinach and cheese mixture evenly over the phyllo sheets.

Top with the remaining phyllo sheets, brushing each sheet with olive oil.

Bake in the preheated oven for 40-45 minutes, or until golden brown.

Remove from the oven and let it rest for 10 minutes before serving.
