Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake for 40-45 minutes, or until the squash is tender.

Once the squash is cool enough to handle, use a fork to scrape out the strands into a bowl.

In a large bowl, combine the spaghetti squash, egg, diced onion, minced garlic, Parmesan cheese, salt, black pepper, and parsley. Mix well.
