Spaghetti Squash Gratin
Spaghetti squash is named for its unique stringy flesh, which resembles spaghetti when cooked.

Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves on a baking sheet, cut side up, and drizzle with olive oil. Season with salt and pepper. Roast in the oven for 40 minutes or until the flesh is tender.

While the squash is roasting, heat olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened. Add the spinach and cook until wilted. Remove from heat.

Once the squash is cooked, use a fork to scrape the flesh into a large bowl. Add the cooked spinach mixture, mozzarella cheese, and dried oregano. Mix well.

Transfer the mixture to a baking dish and top with Parmesan cheese and bread crumbs.

Bake in the oven for 15 minutes or until the top is golden brown.
