Spaghetti squash is a winter squash that gets its name from its stringy flesh, which resembles spaghetti when cooked.

Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves on a baking sheet, cut side down, and bake for 40 minutes or until the flesh is tender. Let cool for 10 minutes.

While the spaghetti squash is baking, heat olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

Use a fork to scrape the flesh of the spaghetti squash into the skillet with the onion and garlic. Add the tomato sauce, Italian seasoning, salt, and black pepper. Stir well to combine.

Transfer the mixture to a casserole dish and top with mozzarella and Parmesan cheese.

Bake for 20 minutes or until the cheese is melted and bubbly.

Garnish with fresh basil before serving.
