Coffee cake is not actually made with coffee, but it is meant to be enjoyed alongside a cup of coffee.

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, sour cream, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.

In a small bowl, mix together the streusel topping ingredients: flour, brown sugar, cinnamon, melted butter, and chopped nuts.

Pour half of the batter into the prepared cake pan and sprinkle with half of the streusel topping. Repeat with the remaining batter and streusel.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
