Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.

In a large bowl, combine the flour and granulated sugar. Cut in the cold butter until the mixture resembles coarse crumbs.

Reserve 1 cup of the crumb mixture for the topping. To the remaining mixture, add sour cream, egg, vanilla extract, baking powder, and salt. Mix well.

Spread the batter evenly into the prepared baking pan. In a small bowl, combine the chopped apples and cinnamon. Sprinkle the apple mixture over the batter.

Sprinkle the reserved crumb mixture over the apples.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the squares to cool in the pan for 30 minutes. Then, cut into squares.
