Solstice Shortbread
Shortbread is a traditional Scottish biscuit that dates back to the 12th century. It was originally made with leftover bread dough and cooked on a griddle.

Preheat the oven to 180°C (350°F).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract and salt, and mix well.

Gradually add the flour and mix until a dough forms.

Press the dough into a greased baking pan and smooth the top.

Bake for 20 minutes or until golden brown.

Remove from the oven and let it cool in the pan for 10 minutes.

Cut into squares or desired shapes while still warm.

Allow the shortbread to cool completely in the pan before serving.
