Add the sliced mushrooms and cook until they release their moisture and start to brown.

Add the rice and stir to coat it in the oil and vegetables.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-20 minutes, or until the liquid is absorbed and the rice is cooked.

Stir in the heavy cream, grated Parmesan cheese, salt, and black pepper. Cook for an additional 2-3 minutes, until the cream is heated through and the cheese is melted.

Remove the saucepan from the heat and let the rice rest for 5 minutes.
