Simple Shortbread Cookie
Shortbread cookies originated in Scotland and have been enjoyed for centuries. They are traditionally made with only three ingredients: butter, sugar, and flour.

Preheat the oven to 325°F (160°C).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract and mix well.

Gradually add the flour and mix until the dough comes together.

Transfer the dough onto a lightly floured surface and knead it gently to form a smooth ball.

Roll out the dough to a thickness of about 1/4 inch (6 cm).

Use cookie cutters to cut out desired shapes and place them on a baking sheet lined with parchment paper.

Bake for 18-20 minutes or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
