  1. Preheat the oven to 325°F (165°C).
  2. Crush the chocolate cookies and mix with melted unsalted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream.
  4. Melt semi-sweet chocolate and whipping cream in a double boiler. Pour the chocolate mixture into the cream cheese mixture and stir until well combined.
  5. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 40 minutes or until the center is set and the top is lightly browned. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove from the oven and let it cool completely. Refrigerate for at least 3 hours or overnight.
  8. Serve chilled and enjoy!
