Shiitake Mushroom and Cheddar Soup

In a large pot, melt butter over medium heat. Add chopped onions and minced garlic. Sauté until onions are translucent.

Add sliced shiitake mushrooms to the pot and cook for 5 minutes, stirring occasionally.

Sprinkle flour over the mushrooms and stir well to coat. Cook for another 2 minutes.

Slowly pour in vegetable stock while stirring constantly to avoid lumps. Bring the mixture to a boil.

Reduce heat to low and simmer for 15 minutes, allowing the flavors to meld together.

Stir in milk and grated cheddar cheese until the cheese is melted and the soup is smooth.
