Heat sesame oil in a wok or large pan.

Add minced garlic and ginger, and sauté for a minute.

Add mixed vegetables and stir-fry for 2-3 minutes.

Add paneer cubes and cook until lightly browned.

Push the vegetables and paneer to one side of the pan and add cooked basmati rice to the other side.

Drizzle soy sauce over the rice and mix everything together.

Season with salt and black pepper.

Stir-fry for another 2-3 minutes until everything is well combined.

Garnish with sesame seeds and chopped spring onions.

Remove from heat and let it rest for 5 minutes before serving.
