Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a tart or pie dish.

Prick the base with a fork and blind bake for 15 minutes.

In a saucepan, combine the strawberries, caster sugar, cornflour, and water. Cook over medium heat until the mixture thickens.

Pour the strawberry mixture into the pre-baked pastry case.

Bake for another 20-25 minutes until the pastry is golden brown.

Allow the tart or pie to cool for 30 minutes.

Serve with whipped cream and a dusting of icing sugar.
