Scotcheroos are a popular Midwestern dessert that originated in the United States in the 1960s. They are similar to Rice Krispies treats but with the addition of a chocolate and butterscotch topping.

In a large bowl, measure Rice Krispies and set aside.

In a medium saucepan, combine granulated sugar and light corn syrup. Bring to a boil over medium heat, stirring constantly.

Remove from heat and stir in creamy peanut butter until well combined.

Pour peanut butter mixture over Rice Krispies and mix until evenly coated.

Press mixture into a greased 9x13-inch pan.

In a microwave-safe bowl, melt semi-sweet chocolate chips, butterscotch chips, and vanilla extract together in 30-second intervals, stirring after each interval, until smooth.

Pour chocolate mixture over the Rice Krispies mixture and spread evenly.

Let cool for 1 hour or until chocolate is set.

Cut into squares and serve.
