  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream, vanilla extract, eggs, flour, and lemon zest. Mix until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove from the oven and let the cheesecake cool in the pan for 10 minutes.
  7. Run a knife around the edge of the pan to loosen the cheesecake.
  8. Remove the sides of the springform pan and let the cheesecake cool completely.
  9. Top with sliced strawberries and dust with powdered sugar before serving.
