  1. In a mixing bowl, whisk together the flour, milk, eggs, fresh herbs, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter. Pour about 1/4 cup of the batter into the skillet and swirl to coat the bottom.
  3. Cook the crepe for about 2 minutes, until the edges start to brown. Flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  4. In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.
  5. Slowly drizzle in the melted butter while whisking constantly until the sauce thickens. Remove from heat and season with salt and cayenne pepper.
  6. Serve the crepes with the hollandaise sauce and garnish with chopped fresh herbs.
