In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and dried sage.

In a separate bowl, whisk together the eggs, milk, and honey.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Carefully remove the hot skillet from the oven and add the butter, swirling it around to coat the bottom and sides of the skillet.
